鱼籽豆腐煲的做法:原料:鱼籽800克;青红尖椒各两个;生姜5片;大蒜15克;南豆腐500克;调料:油80克;盐两小勺;郫县豆瓣15克;剁椒酱10克;料酒15克;镇江香醋30克;鸡精半小勺;水适量;步骤: 1鱼籽去除鱼肠,清洗干净,滤干备用; 2青红尖椒斜切成圈,大蒜切末,生姜切片; 3豆腐切成2CM见方的小块; 4煎锅倒入油,开小火,冷油下入鱼籽,慢慢煎至两面金黄,鱼籽熟透;将煎好的鱼籽盛入煲中;将尖椒、生姜、大蒜过油煸香;将豆腐块、煸过的尖椒、姜蒜倒入煲中,加入盐、豆瓣、剁椒、料酒、醋等作料; 6加入适量清水,搅拌均匀后,中火煮沸后转小火,炖25分钟即可,最后加入鸡精调味。
