蛋黄焗南瓜:南瓜洗干净后去皮,去掉中心的瓜瓢,然后切成1厘米宽4厘米长的段;切好的南瓜段中放入1茶匙盐拌匀,腌制20分钟,让南瓜出水;咸鸭蛋取出蛋黄,并用小勺压碎备用;腌好的南瓜段会出水,控干水分后,放入干淀粉充分拌匀,使每一条上都沾有淀粉;锅中放油,5成热时,放入南瓜条慢火炸至颜色变得浅黄,并且变硬后沥干油捞出;
<br />另起锅,锅中留少许的底油,放入压碎的咸蛋黄,小火慢慢炒;
<br />当咸蛋黄炒出泡沫时再放入炸好的南瓜条,调入1/2茶匙盐和白糖,慢慢推匀即可出锅;

<br />用2个咸蛋黄就够;南瓜段不用切太细;腌完的南瓜条要多放干淀粉;炒蛋黄一定要用小火慢炒
